The Macallan Fine Oak, 15 year old, 43%, This is my favorite of the three. For about $20 more, you get a richer, much more complex whisky than the 10 year old, and it is more balanced than the 21 year old. This 15 is drier than the 10, with lovely floral and spice notes (cinnamon, coriander, dried orange peel, lavender, rose), balanced by honey-laced complex fruit, and a dry, dark chocolate/orange marmalade finish.

Sherry dominates the nose, rounding up stewed apples, dark caramel, raisins, dates, ground ginger, dark chocolate, and hazelnuts to go with the distillery’s characteristic tropical fruit aromas, the result of extra-long fermentation with wine yeast. A well-textured palate showcases the same mix of sherry cask and spirit character, with chocolate, baking spices, almond, pineapple, mango, pistachio, honey, and ginger. Forest floor, dried leaves, and some light char on the nose, with hints of charcoal, drying oak tannins, and emerging notes of vanilla and banana. A sweet and lightly spiced palate, with a bit of minerality, peach, apricot, and honeyed fruits. Very full and flavorful on the finish, with a light sweetness of brown sugar, dark chocolate, and chile powder. It’s a bit light overall at 40%, but very well put together and delicious.
