Aromas and flavors of vanilla fudge and over roasted peanut butter, bread pudding, wet grass and hay, and cinnamon and ginger with a velvety, lively, dryish medium body and a tingling, charming, medium-long finish displaying nuances of honey malt, cinnamon and caramel cream, italian herb garden, and pickled ginger and clove. A touch youthful and grain-forward in flavor, but in the best way possible that also shows restraint with the barrel regiment; a shining example that American Single Malt is turning into an outstanding category.

Chemical, fruity, toasty, overripe aromas and flavors of malty, barrel spice, and a touch of sherry influence, dried red fruit, red apple, vanilla, and cocoa, and wet grass and earth with a satiny, shy, dryish light-to-medium body and a warming, refreshing, medium-length finish that exhibits notes of black tea, dried dates and figs, bitter toffee and raisin bran, and fresh cut grass. A proper benchmark Irish Whiskey with subtle notes of vanilla bean and fresh cut grass.

Sherry dominates the nose, rounding up stewed apples, dark caramel, raisins, dates, ground ginger, dark chocolate, and hazelnuts to go with the distillery’s characteristic tropical fruit aromas, the result of extra-long fermentation with wine yeast. A well-textured palate showcases the same mix of sherry cask and spirit character, with chocolate, baking spices, almond, pineapple, mango, pistachio, honey, and ginger. Rich, sweet, and fruity with baked apples drizzled in honey, crisp white pear, honeysuckle, dried banana, vanilla fudge, and pecan pie. This works so well with the nascent Glenfiddich spirit; lime zest, vanilla, foamy meringue, honey blossom sweetness, and pepper transitioning to lime shred marmalade, soft oak, and a dry spicy finish. This decade-old Basil Hayden entices early with a nose of fresh fruit: there’s green apple, applesauce, lemon juice, ripe Bosc pear, and vanilla frosting. While the mouthfeel is a tad thin (a byproduct of lower proof) the palate is flavorful all the same, spotlighting baking spice, vanilla pudding cup, white pepper, honey, and the slightest hint of black coffee. Peppery spice, cinnamon, caramel swirl, and sugar cookie combine for a warming finish that lingers on for a while.
