Enticing nose of honeycomb, orange blossoms and apricots. What a beautiful balance of richness and freshness this has. The touch of fine tannins very neatly supports the full-bodied palate. Long, silky and structured finish. A cuvee of 40% old-vine clairette, 30% roussanne, 15% bourboulenc and small amounts of other traditional white grapes. 80% was vinified in stainless steel, with the remainder in a mix of new oak and well-used 400-liter oak barrels. Drink or hold.

Various sources report that in 1547 a deed passed before a notary concerned a parcel of vines in an eminé located "ad montem oliveti" but it was not until the beginning of the 20th century that the history of the Sabon family and of this place will be linked. Séraphin Sabon, originally from the neighboring village of Sérignan du Comtat, married Marie, daughter of Romain Jausset, owner in Châteauneuf-du-Pape. In 1932 he created the “Clos du Mont-Olivet”. The domain then passed into the hands of Joseph, Séraphin's eldest son. Today it is Céline, David and Thierry, Joseph's grandchildren who manage it. Blend: 40% Clairette, 30% Roussanne, 14% Bourboulenc, 10% Grenache Blanc, 2% Clairette Rose, 2% Picardan, 1% Picpoul Blanc, 1% Grenache Gris. The terroir features predominantly clay-sand soils, in the vineyard sites of Montalivet, Le Chemin de Sorgues, Les Cabanes, and Palestor. This Châteauneuf-du-Pape Blanc is distinguished by its combination of fruitiness and freshness. It often ages gracefully, developing notes of beeswax and honey.
