Coming from clay-limestone soils in Ribeauvillé, the vines are cultivated according to Alsatian tradition and the treatments comply with the specifications of organic viticulture.
The harvest is exclusively manual. The Pinot Noir is 100% destemmed, then vatted in stainless steel vats.
Fermentation will take place on the marc with daily pumping over. Once fermentation is complete we proceed to devatting, after racking with air we carry out malolactic fermentation.
After aging on fine lees for 6 months, we proceed to bottling.
