Marjorie and Stéphane GALLET have made LE ROC DES ANGES one of the very best estates in Languedoc-Roussillon. Yields are limited to 25 hl/ha for the vintages and 21 hl/ha for the single-varietals. The sensitivity, technicality and tenacity of Marjorie and Stéphane Galet have been rewarded with a well-deserved success. They have created a flagship estate in Roussillon, which since 2014 has had a cellar that allows them to go even further in expressing the terroir, just like the biodynamics that they are steeped in. With vines now mainly located on Montner, a sumptuous terroir for the precise and mineral whites that they love, they continue to plant and diversify the soils to conquer new expressions on the reds.The plots are dotted with small yellow star-shaped flowers, hence the name of this wine. The vines were not necessarily the favorites, the terroir being more suited to Syrah. As for the Mourvèdre, it must be recognized that it did not enter too much into the cultivation of the estate. But very quickly the energy of the Mourvèdre in this wine gives it bloody aromas.
