Various sources report that in 1547 a deed passed before a notary concerned a parcel of vines in an eminé located "ad montem oliveti" but it was not until the beginning of the 20th century that the history of the Sabon family and of this place will be linked. Séraphin Sabon, originally from the neighboring village of Sérignan du Comtat, married Marie, daughter of Romain Jausset, owner in Châteauneuf-du-Pape. In 1932 he created the “Clos du Mont-Olivet”. The domain then passed into the hands of Joseph, Séraphin's eldest son. Today it is Céline, David and Thierry, Joseph's grandchildren who manage it. Produced for the first time in 1989. Flagship of the estate, produced only during great vintages from very old Grenache vines (the oldest were planted in 1901) supplemented with Mourvèdre and/or Syrah in varying proportions depending on the vintage. . All the grape varieties ferment together giving a concentrated but elegant wine of great length.
