This is the mineral hammer of the lineup. The name means “dog’s teeth,” a reference to the jagged limestone rock in the vineyard, and the wine tastes like it. Bright citrus, green apple, crushed stone, white flowers and a long, firm, salty finish. This has the most cut, tension and coiled energy of the group and should age beautifully.
