"The work of the vineyard is carried out in the greatest respect of the traditions in order to produce fine and elegant wines. All our interventions in the vineyard are reasoned according to our observations on the plant, the soil and the climate of each vintage, matrices of our terroirs. Starting from a traditional size called "Chablisian size" based on two twigs of the previous year, our vines are attached, trellised and trimmed to produce quality grapes. Once harvested by the passage of the harvesting machine, the berries of grapes are directly conveyed to the cellar and gently pressed over more than two hours in order to extract the most profitable materials to our wines of Chablis." -Winery
