The blend is 52% Chardonnay and 48% Pinot Noir sourced from some of Champagne’s most revered villages including Le Mesnil, Avize, Cramant, Chouilly, Ambonnay, Mareuil, Verzenay, Aÿ, and Verzy. The color and aromatic lift come from a tiny portion of still red Pinot Noir from an over 80 year old parcel called Vallofroy, planted on a steep slope along the Marne beside the famous Clos des Goisses.
After 100 months on the lees and a very low 4.7 g/L dosage, the wine shows beautiful layers of wild strawberry, raspberry, citrus zest, chalky minerality, and Billecart’s signature creamy mousse.
