The wine ages in concrete tank for 9 months before bottling. François is a fan of completely destemming his Cabernet Franc, as to avoid the underripe green notes than can dominate the wines of this region. François also appreciates the geology of Bourgueil with its generosity of clay, lending the wines their structure and age-worthiness.
