"The vines are less than 30 years on average and are sourced from 5 ha of plots. The grapes are 100% destemmed before being fermented in concrete tank pump overs and punch downs for 15 days. The wine ages in concrete tank for 9 months before bottling. François is a fan of completely destemming his Cabernet Franc, as to avoid the underripe green notes than can dominate the wines of this region. François also appreciates the geology of Bourgueil with its generosity of clay, lending the wines their structure and age-worthiness.
