ZARATE Albariño is a fresh, balanced, and elegant wine; its minerality and natural acidity are key to this balance. The ZARATE vineyards have an average age of 35 years.
We cultivate our vineyards using environmentally friendly viticulture practices. Since 1994, all our plots have been cultivated using no-till methods with permanent natural cover crops, and no herbicides are used, which increases the biodiversity of the flora. In the 2006 harvest, we obtained Integrated Production certification for our crop. This cultivation system aims to produce a high-quality harvest, eliminate insecticides and acaricides, reduce the use of pesticides, safeguard our viticultural heritage, and protect the environment.
The harvest is done by hand, and the grapes are selected in the vineyard. They are destemmed and gently pressed, yielding a low amount of must. After a light settling, it ferments spontaneously in a stainless steel tank and remains on its fine lees for 3 months.
