This American take on English clothbound cheddar was borne from a landmark partnership between Vermonts Jasper Hill Creamery and Cabot Dairy Cooperative. The cheddar ages in the Cellars at Jasper Hill, yielding a crumbly and slightly crunchy, tangy and savory-sweet paste.
