Extremely soft and melting, the Calisson is one of the oldest delicacies from sud of France. A skillful blend of almonds, candied melon, and honey, the traditional calisson paste is richly flavored, creating incomparable tastes: the subtle marriage between almonds and candied melon is enhanced with a hint of candied orange peel. The paste rests on a wafer-thin unleavened bread sheet and is adorned with a royal icing.
