Comté remains one of France’s most tradition-bound cheeses. Made under strict AOC guidelines, it is produced from milk collected daily from over 3,000 family farms practicing non-intensive, quality-focused agriculture. Cheesemaking begins within 24 hours of milking and is carried out in village-based cooperatives—a system preserved for over eight centuries. After shaping, the wheels are aged on spruce boards in cool, dark cellars, where careful tending allows their flavors to deepen and evolve over time. This Comté is aged six months to develop a firm, satiny texture. Its flavor is layered and elegant, with notes of fruit, hay, and a subtly nutty, smoky character created during the cooked-curd process.
