Suluguni is a semi-firm Georgian style cheese made from cow’s milk. Used widely in Georgian and Eastern cuisines, Suluguni’s savory flavor and melting qualities makes it a perfect pairing to any dish. It can be eaten simply as a table cheese served in wedges or also added to salads, pasta, and even pizza. It typically has a slightly salted flavor and an elastic consistency in a shape of a flat disc.
The texture is layered with dense and rich elasticity similar to pasta-filata cheeses such as mozzarella. The color is white or dark yellow depending on whether it was smoked or not. The average thickness of the disc is 1-1.5 inches. It comes in weights of 16 oz. for the plain and 15 oz. for the smoked version.
