Product Description:

All of the grapes are grown from a single site in the Paardeberg region, between Paarl & Malmesbury on the West Coast. The vineyard was planted in 1990 to high density vines, all dryland farmed. As of 2013 Stompie's farmers are practicing more organic farming methods with no chemical sprays. Soils are mostly decomposed granite with Malmesbury shale which acts as a building block for the the structure & freshness of his wines. The grapes are hand-harvested in the early morning to help retain freshness in the finished wine & then transported back to the winery where they undergo 100% whole bunch fermentation for approximately 10 days. The juice then spends an additional 22 days "post ferment" on the skins for tannin integration. Aging occurs for 11 months in neutral French oak on the gross lees, after which the wine was bottled in April 2016. No fining or filtration upon bottling.
