"The sweet NV Pedro Ximénez Tomás García is a clear step up in complexity and character compared with the young and unoaked version. Bottled at five/six years average age, the time in the old solera barrels has added a layer of spices, dried fruits, ashes and tobacco leaves with some rusticity (tree bark, carob beans). The palate is sweet, but you wouldn't guess there's more than 430 grams of unfermented sugar per liter here! Sweet but not cloying. Up to 5,000 bottles filled per year."
