The 25 year old vines are planted atop clay and limestone soils. Elevage is done in stainless steel, and roughly 30% of the wine goes through malolactic fermentation - a deft winemaking call to soften some of the sharper edges. The nose is extremely inviting: oyster shells, chalk, and citrus peel. The palate is as refreshing as they come - a perfect summer white with bright acidity and gobs of character: white florals, lemon/lime zest, a hint of pear and apricot (?) play off one another perfectly. The back end tension is spellbinding, and left me reaching back for the glass again and again...
