"Olivier Merlin is considered one of the most important producers in the Maconnais in southern Burgundy. So much so that the prolific winemaker Dominique Lafon sought him out to partner together to recreate the epic estate Chateau des Quarts in Pouilly-Fuissé. The wine may not be Puligny-Montrachet, or Meursault, but this little Macon blanc is a great expression of Olivier's mineral laden vineyards. The soil is quaternary limestone-clay soil (Middle Bathonian). Direct pressing of whole crop and very gentle settling. 85% undergoes alcoholic fermentation in temperature-controlled stainless steel vats and 15% in oak barrels. 100% malolactic fermentation. Bottling follows 18 month' elevage and light filtration. No finings. Average yield is 60hl/ha." - Importer
