"Crush to press. Wild fermentation in neutral french oak barrels. Aged for 2 years
"Ceres. The Goddess of Harvest, Agriculture, grain crops. Other than the farming aspect this wine had that cereal characteristic that stood out to Abe." - Winery
About the Winemaker: Abe Schoener
"Former 9 year philosophy professor at St. John University, Abe turned to educate himself on viticulture. Abe began Interning at Stag’s Leap and soon met John Kongsgaard and began making wine under his wing at Luna Vineyards in 1999.
"Now Abe, with his Scholium project brand also consults and makes wine for The Red Hook Winery.
"His inquiry method of vinification allows the grapes to become wine with very limited control and to be as natural as possible through the fermentation process and elevage." - Winery
