This is a raw sheep's milk cheese made with Bardalaira ewe's milk, and coagulated with thistle. Serra da Estrela DOP is eaten in two styles: buttery and rich where it oozes once you cut into it, and more mature: more cohesive and firm, and of course, more pungent.
