"100% Cabernet Franc grapes, which is the prinicpal red grape of the Loire Valley and found in such appellations as Chinon and Bourgueil. This grape is turning out to be a success story on the North Folk of Long Island. This wine was aged in oak barrels for about fourteen months and then bottle aged before being released in January 2005. 12.5% alcohol and fermented dry and underwent secondary malo-lactic fermentation. A fruity Cabernet Franc, reminiscent of Loire siblings. It displays hint of the aroma of "jalapeno" pepper at times. It has nice red berry flavors and a soft mouth feel. It shines with pork or veal cutlet and rare tuna steak." -Winery
