WINERY:
"Merlot and Cabernet Sauvignon vines are planted on wire and Carinena wines are planted in 'gobelet'. Soils are mainly limestone clay (argileux-calcaire). They are trying to make the vineyards 'lutte raisonee' (disease-resistant) and applying treatments only when it is absolutely necessary. They choose products that respect the wild fauna, destroy bad diseases, and avoid insect attacks. They use some principals of biodynamic winemaking in the vineyards and in the cellar too, such as scheduling work on the cycle of the moon (the pruning, racking, etc)." -Importer
WINEMAKING:
"Sot Lefriec does not add yeast (they use the wild yeast), and they make the yeast selection during the prefermentation maceration. Merlot and Cabernet Sauvignon have long alcoholic fermentation (around 30 to 35 days). The Carignan alcoholic fermentation is shorter than Merlot and Cabernet Sauvignon. After the alcoholic fermentation, all the wines are put in barrels. Malolactic fermentation and maturation are in French oak barrels of 225 liters. The barrels used are Troncais, Allier and Nevers (fine grain, dried for 3 years and medium toasted)." -Importer
