"The insider connection is KL's relationship with Bernard Raveneau, who hand-selected this cuvee along with Kermit himself, and then followed the vinification and unfiltered bottling with attention to every detail. From a single parcel cultivated organically, there is a purity and intensity to this wine that is hard to miss. The Domaine Costal Chablis Les Truffieres is a unique KLWM project and stems from their relationship with Bernard Raveneau. Bernard manages to find the time to take on some consulting projects in and around Chablis in addition to his busy full-time job at his namesake domaine. One of these projects was helping KL to purchase a tank of great Chablis from Domaine Costal, the second label of Domaine Jean Collet. The project began with a simple barrel tasting with Kermit and Bernard and led to the creation of a custom label, the creation of a new wine, a custom vinification and bottling process driven by Bernard, and a great new wine was born. The Chablis "Truffieres" comes from a single vineyard site or lieu-dit known as a place where one might find some wild truffles. The decided to use the name of the parcel on the label, which had never been done by the domaine. The parcel has been worked organically for many years. The vinification takes place in stainless steel tanks and the wine is neither cold-stabilized, fined nor filtered. It is left to settle naturally for an extended period of time then bottled au naturel. The combined skill of Collet and Raveneau and the excellent terroir of Truffieres combine to give this wine extraordinary purity and finesse. There is no mistaking it is Chablis with its zesty minerality and impression of wet stone, gripping freshness and verve to the bold Chardonnay fruit. All three vintages they have bottled have aged well in the Collet cellars taking on classic hazelnut and butter aromas along with the Chablis minerality (their first vintage was 2005). There is thus no reason that this wine cannot age just as more expensive premier and grand cru Chablis is capable of doing. This is a great wine at very reasonable prices." -Importer
