It’s not every day that you get to mix Champagne, knives, and come out better for it! We sat down with Patrick Cappiello, the wine director at Pearl and Ash, to talk about sabering, savoring, and his favorite bottles of bubbly.

Patrick’s Picks:

Pierre Moncuit Blanc de Blancs

The champagnes from Pierre Moncuit are consistently some of the best values to be found in the region. Add to that there location in the heart of the famous Les Mesnil sur Oger, it’s easy to get excited about these wines.

Savart L’Accomplie

This wine, which is heavily based on Pinot Noir has great power and focus. Savart is a great example of the new generation of growers finally making it to the American market.

Berech Brut

The wines of Rapheal Bereche are so exciting and vibrant. It’s no wonder that they are becoming more and more difficult to come by, but always worth searching out!
