This sweet sherry vinegar is produced by a family run company in Jerez, Spain, using the Pedro Ximenez grape. The grapes are sun dried (to raisins), concentrating all the sugars. They are then pressed, aged in wood, and the result is an exquisite sweet and sour vinegar, that of Pedro Ximenez.
