"Kiuchi brewery has been making sake since the 1800’s and their style dates back to that time period. The sake has a slight red apple character that lends sweetness to the round mouth feel. This sake is an ideal pairing with sunomono because of the sweet and sour flavors of the classic vinegar based salads. Rice is Kikusakari. Polishing 65%. Alcohol 15%." reviewed 4/23/2014
Matured slowly in real Akita cedar barrels, imparting subtle aromas and fl avors of the cedar wood in the sake. This unique sake has some sweetness, initial pepper notes, a little bitterness, and some detectable wood on the palate.
