"The 'Hommage Francois Hemart' from Henri Giraud is a fantastic blend of 70% Pinot Noir and 30% Chardonnay, which was aged 3 years on its lees in stainless steel. The complex aromas of pear, green apple, toasted brioche, wet stones, key lime, smoke, vanilla, and flowers are absolutely gorgeous as they jump out of the glass. This possesses a beautiful elegance with exceptional focus and purity as well as wonderful minerality. The finish dazzles with lively acidity and beautiful freshness. "François Hémart, an ancestor of Claude Giraud, founded this estate in the 17th century. This cuvée comes entirely from the grand cru vineyards of Aÿ, a blend of pinot noir (70 percent) and chardonnay that ages six months in tank and another six months in barrel. It’s the freshest and most lively of the Giraud wines we tasted, with acidity that feels austere, almost jagged and gruff, before it binds with the quince and apple flavors. It’s a little briny, with buttery green olive notes and dry toast flavors. A gastronomic Champagne, this is not meant for aperitifs, but rather for something as rich as the chicken livers with snails at Rouge Tomate in NYC"
