From northern Italy near Venice, the vines planted on high-altitude hillside vineyards, benefit from well-drained, mineral rich, volcanic basaltic rock and chalky clay soils. Handpicking and cold fermentation promote fresh acidity; the wine is not oak—aged, which allows the grape’s pure varietal character to remain prominent.
