"In the Northeast corner of the District of Utiel-Requena lie the vineyards of the Sierra Norte Winery, a winery run currently by the third generation of winemakers. The 367-hectare Finca Fuente Seca estate lies in Utiel Requena, a high and rugged plateau nearly 1,000 meters above sea level (soils are from the Jurassic and Cretaceous period). Hot, dry summers, cold nights and poor limestone terrain make the area ideal for organic farming. Made with 80% Macabeo, 20% Sauvignon Blanc. Macabeo is the second-most important white grape in a region where 94 percent of plantings are reds. It is resistant to frost which is quite typical in that area. The berries and clusters are large and compact. Diurnal temperature fluctuations are up to 20 ° C, and a rainfall throughout the year of about 400 ml. With early rains in spring and late fall, and the special soil this makes these vineyards unique within their Valencian neighbors. After a gentle pneumatic pressing the wine goes through a short controlled fermentation at very low temperatures. After one racking off the gross lees the wines stay for two months in stainless steel tanks on their fine lees before bottling. Organic" Winery Info
