The second vintage of the white blend 2019 Bimbache Blanco has less alcohol (1.2% less than the 2018) and the same or higher acidity and freshness! Part of the volume fermented with skins in oak barrel, where it developed a layer of yeast, and 60% of the volume aged in stainless steel and the rest in oak barrels. This is a lot more volcanic and mineral, a lot more Atlantic, with contained alcohol and a vibrant palate with a salty touch. It's a lot fresher than the 2018 and even fresher than what the nose points at, with a citrus sensation intermixed with that marine background. The majority of the grapes are Verijariego Blanco. 3,500 bottles produced. It was bottled in July 2020.
Bimbache Blanco is made with a wide range of varieties of which the main one is Vijariego Blanco. They are vineyards located to the north and northeast of the island of El Hierro whose vines are planted on volcanic sand soil with small amounts of clay. These are old vines between 50 and 100 years old at an altitude of 500-800 meters above sea level and which are cultivated with the utmost respect by hand.
