The Rasteau la Fontaine is the most muscular cuvée made at Domaine la Collière. A blend of Grenache and Mourvedre, La Fontaine is sourced entirely from blue clay soils – the terroir that generally produces the most robust and structured wines in Rasteau. The Grenache is aged in cement tank while the Mourvedre is aged in demi-muid. Hand harvested, destemmed, fermented in concrete, délestage 2–3 times.
The words finesse and Rasteau are seldom used together. Rich, dense or rustic are more commonly associated with the wines from this village in the Rhône valley. Domaine la Collière stands out in Rasteau as a proponent of a more elegant style of wine. While others pursue concentration and density to tame this wild terroir, Georges and Delphine Perrot try to avoid over-extraction so as to promote aromatics, reduce harsh tannins and re-frame the power of their terroir with freshness. Their wines are adamantly Rasteau but lifted and bright, sappy and intense.
Their cave, located in the former cellars of the self-professed madman of Rasteau, André Roméro, was established in 2002. For a decade preceding the founding of the estate, Georges had been farming the vineyards of Delphine’s family – weaning them off chemical treatments while getting a sense for the potential terroir by working it with his own hands. Divided over 30 vineyard plots, this 25 hectare estate has holdings in the three main terroirs of Rasteau: red clay and gravel, pale limestone clay, and blue clay. Each adds a unique quality to the wines and dictated the character of the final blends at Domaine la Collière.
Apart from a few demi-muids for aging Mourvedre, the wines of Domaine la Collière are aged entirely in old concrete tanks. The preference here is for a gentle maceration of the grapes during fermentation with délestage performed two or three times over the course of vinification. Georges and Delphine make six wines, each expressing a different aspects of the three terroirs of Rasteau." -Importer
