"The grapes are harvested in the early AM to be cool. They are destemmed and pressed The skins and juice macerate in the press with CO2 blocking the empty space for about 3-4 hours to extract Nitrogen in the must which is important for yeast health in fermentation. The juice is then racked to a stainless steel tank to decant for 24 hours and clarify. It is then racked off the deposit into a combination of wood and stainless steel to ferment. Most is in steel around 70%. Aging 2 years total aging with the first year part in 500L used oak and part in stainless steel.
