Enticing nose of honeycomb, orange blossoms and apricots. What a beautiful balance of richness and freshness this has. The touch of fine tannins very neatly supports the full-bodied palate. Long, silky and structured finish. A cuvee of 40% old-vine clairette, 30% roussanne, 15% bourboulenc and small amounts of other traditional white grapes. 80% was vinified in stainless steel, with the remainder in a mix of new oak and well-used 400-liter oak barrels. Drink or hold.

Various sources report that in 1957 a deed was signed before a solicitor which concerneda plot of vines located in « ad montem Olivetti » but it wasn't until the begining of the XXth century that the association between the Sabon family and this locality was forged. Séraphin Sabon, a native of the the neighbouring village of Serignan du Comtat married Marie, daughter of Romain Jausset, landowner at Châteauneuf-du-Pape. In 1932 they created the « Clos Mont Olivet » Since then the domaine has passed through the hands of Joseph, eldest son of Séraphin and then his children. Today it is Celine, David & Thierry SABON the grandchildren of Joseph who manage the estate.
The estate extends to 21hectares in Chateauneuf-du-Pape, 14 hectares of Lirac, 10 hectares of Cotes du Rhone and 3 hectares of Vin de Pays du Gard. The various plots of vines belonging to the estate are very fragmented and come such localities as « Palistor » further to the north and encompassing, « Chemin de Sorgues », « Les Marines », « Le Moulin à Vent », « Les Parrans », « Les Cabanes », « La Font du Pape », « Coste Froide », « les Blachières », « Bois Seneseau », « Montalivet », « La Crau », « Les Bousquets », « Pied de Baud » and « Bois Dauphin ». The orientation of the vineyards, the local climates and the soils are all extremely varied (quartzite deposits, sands, mollasic sandstone, marine clay ….) and allows one to adapt the varietal to the particular plot or to play on the diverse expression of the samevarietal. For the red wines, it is the Grenache who reigns and is by far the dominant varietal. It is followed by Syrah, Mourvedre and Cinsault and putting in a guest star appearance are Counoise, Vaccarèse, Muscardin, Picpoul Noir and Terret Noir. Concerning the whites, there is no particularly dominant varietal. Clairette Blanche and Rose, Bourboulenc and Roussanne share 4/5 of the production with White Grenache, Picpoul Blanc and the Piacardan making up the rest. The parcels in AOC Lirac, Côtes-du-Rhône and IGP GARD, including vines located in the places called "Sainte Cardille" on the Commune of Orange, then GARD side in Saint-Laurent-des-arbres and Saint-Laurent. Genies-de-Comolas on the places called "Les Cosses", "Liqueurs", "Caveyrac", "Mont Cau", "Liqueurs", "La Coste", "Gissac", "Le Clau", which does not exclude heterogeneity of soils and mesoclimates. Grenache and Syrah share the majority of the vines joined by Carignan, Mourvèdre, Cinsault. The vines are cultivated following a reasoned and balanced method of viticulture....The major part of the vineyards are tilled and almost all the vineyards of Chateauneuf-du- Pape use sexual confusion methods to protect against pests and so avoid the use of insecticides.
