The NV Crémant de Loire Brut de Schistes is a sparkling blend of 80% Chenin Blanc and 20% Chardonnay whose vines were planted in the 1980s and 1990s in the larger St. Lambert area, so on schist soils. The base wine didn’t undergo malolactic fermentation and went into the second alcohol fermentation in the bottle without fining. The wine is always kept on lattes for 24-36 months and disgorged with a dosage between zero and 3.5 grams per liter, depending on vintage. The label doesn’t show which edition you get, unfortunately, but mine—from Becky Wassermann in Beaune—is based on the 2015 vintage and was disgorged in January 2019. The color and bouquet are bright, fresh and delicate, with ripe white fruit aromas, such as yellow apples, along with very fine brioche and lemon notes. With 12.5% alcohol, this is a light to medium-weight, bone-dry but intense and structured Crémant with a long and concentrated, fresh and sustainable finish. This is a serious wine to have with fish and white meat rather than as an aperitif. Really fabulous and with a perfect yeasty layer that gives texture and rounds up this otherwise steely Brut, which is in fact a Brut de Brut, if not even a Brut Nature. Highly recommended. Tasted in May 2021.
