"They describe their viticultural approach as lutte raisonée, or one where treatments are applied only in direct response to a verified threat rather than the old school approach of treating in anticipation of a problem. After a manual harvest the chardonnay is pressed using two different types of presses and the must is allowed to settle for 24 to 48 hours depending on the characteristics of the vintage. The fermentations occur in barrel though new wood is limited to no more than 10 to 15% and in some years, such as 2009 for example, no new oak was used. The whites typically see 12 months of élevage after which the wines may or may not be fined but are typically filtered before bottling under natural cork." - Allen Meadows
