John Gilman - View from the Cellar
"Monsieur Chevillon commented that the 2011 les Cailles was already beginning to close down for the winter and that the wine was quite a bit more expressive a few weeks before my visit. Given how beautifully this great wine in the making was showing, I would have loved to have seen it when it was really on form! The stunning and very sappy nose offers up scents of plums, black cherries, raw cocoa, a touch of meatiness, coffee bean, nutskins, a dollop of vanillin oak and a simply stunning signature of soil. On the palate the wine is very pure, full-bodied and youthfully structured, with a sappy core of fruit, ripe and suave tannins, lovely focus on the soil- driven finish. The 2011 is a great young Cailles that may not quite match the brilliance of the 2010 version, but is an absolute reference point example of this superb terroir. 2025-2070."

"As complex as the Pruliers is, the Les Cailles ratchets it up yet another notch with its spicy and pure blend of cassis, plum, violet and distinct iron-infused earth. There is excellent richness to the cool and equally pure medium-bodied flavors that possess excellent focus on the explosively long finish. The tannins are dense but quite fine and this offers outstanding upside development potential."

"Good dark, bright red. Dark cherry, bitter chocolate and crushed stone on the nose. Broad, dry and refined, with a sweetness leavened by pungent red berry flavors complicated by spices, pepper and earth. Can't match the fruit intensity and freshness of the young 2012 version but the rising finish boasts glistening, sweet tannins and a sound structure for a graceful evolution in bottle."
