The fruit macerates for 10 days before being lightly crushed. It goes thru Malo in tank and is then moved to barrels for 9 months of aging. Tasting Notes: Crushed cherries and dark berries intermixed with bakers chocolate and exotic spices Color: Deep dark crimson Bouquet: Ripe with the bright aromatics of sour griotte cherries and plums.
