"The estate was founded towards the end of the 19th century, but it only really took off commercially in the 1930s, under the direction of Hubert, Paulet the current owners Grandfather. It is currently being run by the 4th generation of the family. The winery buildings also date back to the end of the 19th century. The family owned vineyards cover about 20 acres and are entirely in the village of Rilly, Premier Cru. The goal is to 'extract' the best from this terroir, by working the soil and introducing the practice of controlled natural grassing (E.N.M). Although it is hard work (summer 2003 was excruciating), this conversion, which they have been practising now for over three years, has a host of things to teach about our soil and the way it works.
