"Tasting Notes: Characteristic of the vintage, it is a rich and massively structured wine, showing spice, blackberry and cherry flavors with a backbone that will allow many years of enjoyment and aging. Vineyard Notes: East facing slopes of volcanic rhyolite and uplifted sediment provide the rocky soils for the mature Cabernet vines. Above the fog-line, the fruit ripens completely, developing ripe, rich flavors and the firm, deep structure of Diamond Mountain. Winemaker Notes: The fruit was hand-picked at the peak of ripeness, and hand sorted to remove leaves and damaged fruit. After destemming the berries were sorted again to remove stem fragments before moving to the fermenter. A five day cold soak was followed by a two-week fermentation using indigenous yeasts and twice-daily punchdowns. The wine was pressed off after macerating on the skins for 38 days, then racked into 85% new French Oak for 20 months." -Winery
