- "Every parcel is harvested by hand and then goes through a vineyard and winery triage before crush. Only 75% of the grapes are crushed and the balance goes into tanks whole. The sisters are partial to cement tanks and all wines are fermented in these before passing into barrel. As the property prefers a more restrained style to the wines, none of the cuvees are macerated for extended lengths of time. There is no malolactic
fermentation for the wine. Lirac has always stood in the shadow of its more famous neighbor to the northeast, Chateauneuf-du-Pape. However, it shares many of the same varietals and terroir characteristics as CdP. Red grapes grown in the zone include Grenache, Syrah, Carignan, Cinsault, and Mourvedre. The whites are made up of Roussanne, Marsanne, Viognier,
Clairette, Bourbelenc, Grenache Blanc, Ugni Blanc, and Picpoul." -Importer -
