"Wrath" of Buffalo milk cheese seasoned and aged with almond oil and hot chili powder

To the line of the 7 deadly vices, we add wrath (Ira). This is a buffalo milk-only cheese, which is seasoned and aged into a crust with almond oil and hot chili powder. A cheese that well represents the characteristics of buffalo milk with a slight acidity, but also with all its sweetness, mixed with the flavor that characterizes its taste. A clean, well-made cheese, without burrs or imperfections and balanced. With our refinement, we have added the ripening time and the crust treatment with almond oil and hot pepper, which also justify its name, namely Ira.

Ira because if you also eat the crust the spiciness of the chili pepper radically changes its organoleptic characteristics. In fact, it is always advisable to start eating the cheese from the pasta, to perceive all the primary characteristics and then end with the crust. The crust, as already mentioned, is edible. But, it is advisable to remove it for those who are not very tolerant of chili pepper.
