The Malbec grape, known locally as Cot Noir, is the single most important varietal in the appellation, making up at least 70% of any wine. It is a robust, tannic grape, with an inky juice and deep aromas. In this case 90% is used. Added to this is 10% of Merlot, which softens the mouth feel and allows for earlier consumption of a wine which other wise would need several more months of aging. Winemaking at the Chateau is very traditional. Long (23 day) maceration in stainless steel at low temperatures, thus preserving the aromas and primary fruit characteristics. The malolactic fermentation takes place in underground cement cuves, and then the wine is aged in new French oak barrels for 14 months. The Chateau does not release the wine for six full months after bottling." -Importer
