About

Rating:

91

"This too displays an entirely classic nose of algae, salt water and airy green fruit aromas cut with subtle lemon zest hints that are also picked up by the complex and layered middle weight flavors that offer a beguiling texture and fine richness on the wonderfully long finish. This is a Fourchaume of refinement, which is typical of wines hailing from L'Homme Mort. Worth a look." -91 points- Allen Meadows- Burghound

"Olivier Savary directs this 17 ha domaine and describes the 2008 vintage as one that 'gave us excellent maturities. We waited to pick until the first of October and brought in perfectly clean fruit where everything was between 12 and 13%. We essentially chaptalized nothing and while the acidities are firm, they are not aggressive, which when accompanied by the natural concentration of the vintage gives very balanced wines that are richer than the '07s. I personally prefer the style of the '08s but the '07s are excellent and perhaps even more classical.' As usual, the Savary old vines cuvee is excellent and it's worth seeking out." -Allen Meadows on Olivier Savary

WINE:
"Since 1984, Francine and Olivier Savary have ran the winery, located halfway between Dijon and Paris, along the best situated vineyards along the Serein valley. Chablis is the northernmost vineyards in Burgundy and the only varietal grown is Chardonnay...the Chablis 1er Cru Fourchaume is elegant and distinguished, a wine that reaches its maturity in 4 to 5 years. With rich aromatics of fruit and floral notes, this is a very feminine wine." -Winery; translated by KM
