"Once harvested, we crushed the grapes immediately and cold soaked the must for three days to stabilize the color. It was then fermented in open-top fermenters for nine days, with punch downs three times a day. The result is a silky, yet plush wine with crushed cranberry and allspice aromas hinting at clove and nutmeg. A great reflection of the Pinot Noir grape, it has beautiful flavors of cranberry, cherry, dried strawberry, and sweet moderate tannins. Barrel aged for 12 months in French oak, 60% new, 40% 1-to-2 years old; 100% Pinot Noir; 14.23% Alcohol." -Winery
